Rich Pecan Pie

Serves 8-10 350°
 4 eggs
 1 cup light brown sugar
 1 cup dark corn syrup
 1 Tbsp rum flavoring
 ¼ cup butter, melted
 1 cup pecan halves
  pie dough for single crust pie
 
Preheat oven to 350°. Line a 9½ glass pie plate with the dough. Glass holds heat better and produces a better crust. Beat together the eggs, brown sugar, corn syrup, rum flavoring, and butter. Line the pie plate with the pecans and pour in the filling mixture. Bake for 50-55 minutes, then cool for at least an hour on a wire cooling rack. Serve with a dollop of whipped cream or a scoop of vanilla ice cream.
 
Variation - Chocolate Chip Pecan Pie: spread ½ cup of chocolate chips in the pie crust before adding the pecans.
